Gluten is found in flour. Gluten is protein. Gluten can trap air in baking. A lot of gluten is sticky and stretchy. Protein is found in soy/meat and dairy as well as muscles. protein builds muscles.
We had to make the dough and then leave the dough over night. the dough is made out of water and flour. we made the dough because we wanted to see what gluten did.
After, we washed the dough. It was really sticky and gooey but we had to wash it away so it was not gooey any more. When we washed it we ended up with a little bit of gluten. we Used some of our dough to make fried bread. there was to much gluten so that is why it was too chewy. It was really hard but I still did like it.
